Opening a hotel is always fun – but it gets even more exciting when you are in one of the senior positions, and are not just involved with doing the ‘coolie’-work. And so it has been for me – part of the pre-opening team of HIAUH, and incharge of my own kitchen (for the first time ;-)) its been a crazy ride for the last three days.
Weve all (the senior guys ‘n gals) been put up in the rooms since day before, and have been working like dogs to get the hotel going. Hopefully, if all goes well, we should be live before the Abu Dhabi F1 Grand Prix (which now holds no interest to me, as Mr. Button already has the championship).
We set up the first dinner buffet day before – and its always so emotional getting out the first dishes from a brand new kitchen. The food was awesome – the people great – and it just stirs some really nice emotions when all of these things go together – its like becoming a father again – only that this time the food going out is your baby.
Anyhow, the celebration carried out to our rooms, where we sat and downed tequila till around 2 in the morning, and after a brief walking stint to the friendly neighborhood petrol pump for some grub, I was snoring away for a very short 1.5 hours, because the first ever breakfast service for HIAUH came calling….
And so it was Led Zeppelin playing at 5am on my lappie – and the dough mixers and oven at full swing, and of course, a few cans of red bull to keep me going – But eventually, the breakfast was out – it was a new morning – and a great sense of achievement.
It took us a lot – realizing that there were no baking trays, and running over to a smuggled goods market to get them, figuring out that the pallette knives had not arrived – ingredient lists – ingredient samples and what nots…. but the food came out nonetheless, to a very happy group of people – who are seeing this baby grow day by day…
